  • 1/4 cup light brown sugar
  • Fresh lemon juice and zest

Instructions

  1. Roll out half of the pie dough into a 9-inch pie plate and refrigerate.
  2. In a large pot, cook sliced apples with sugars, lemon zest, salt, and cinnamon over medium heat until tender (10-12 minutes).
  3. Allow apples to cool on a baking sheet for 30 minutes.
  4. Preheat oven to 425°F.
  5. Drain cooled apples; reserve 1/4 cup juice mixed with lemon juice.
  6. Fill the crust with cooled apples and drizzle with lemon juice mixture.
  7. Top with second rolled-out dough, crimp edges to seal, and cut vents for steam.
  8. Bake at 425°F for 25 minutes, then lower to 375°F for an additional 25-30 minutes until golden brown.
