  • 2 cups all-purpose flour
  • 1 1/2 tablespoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup butter, cubed
  • 1 cup whole milk
  • 1 egg
  • 1 1/2 cups shredded cheese (cheddar blend, Parmesan, or mozzarella)
  • Optional: Garlic butter topping

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Shred zucchini using a grater and drain excess moisture by pressing with paper towels.
  3. In a mixing bowl, combine flour, baking powder, salt, black pepper, and garlic powder.
  4. Cut in butter until crumbly.
  5. In another bowl, whisk egg into milk; then stir in cheese, scallions, and drained zucchini.
  6. Combine wet and dry mixtures gently until just combined.
  7. Use an ice cream scoop to drop dough onto prepared baking sheet.
  8. Bake for 20 minutes until golden brown.
