  • 2 large eggs
  • 12 Tbsp unsalted butter, melted
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp vanilla extract
  • 3/4 tsp baking soda
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups shredded zucchini
  • 1 cup pecans, chopped
  • For the frosting: 4 Tbsp unsalted butter, 1/2 cup brown sugar, 2 Tbsp milk or cream, pinch salt, 1 1/2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 baking pan and line it with parchment paper.
  2. In a mixing bowl, whisk together eggs, melted butter, granulated sugar, brown sugar, salt, cinnamon, nutmeg, and vanilla until combined.
  3. Stir in baking soda and fold in flour until no dry pockets remain.
  4. Gently mix in shredded zucchini and chopped pecans without overmixing.
  5. Pour batter into the prepared pan and bake for 35-45 minutes or until a toothpick comes out clean.
  6. For the frosting: melt butter with brown sugar in a saucepan over medium heat; stir in milk or cream and gradually add powdered sugar until smooth. Pour over cooled bars.
