  • 4 oz arugula
  • 1/2 cup cherry tomatoes
  • 2/3 cup toasted walnuts
  • 1/3 cup grated parmesan cheese
  • Juice and zest of 1.5 lemons
  • 3/4 cup olive oil
  • 1 Tbsp white balsamic vinegar
  • 2 tsp dijon mustard
  • 1 Tbsp capers
  • 1 tsp caper brine
  • 1 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp honey

Instructions

  1. Cook pasta in salted boiling water until al dente (about 10 minutes). Drain and rinse under cold water.
  2. In a mixing bowl, whisk together lemon zest and juice, olive oil, vinegar, mustard, capers, honey, salt, and pepper until well combined.
