  • 3 shallots, minced
  • 16 ounces fresh mushrooms, sliced
  • 6 carrots, peeled and chopped
  • 1 sprig of fresh rosemary
  • 1 sprig of fresh thyme
  • 1 dried bay leaf
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 1/2 cup red wine
  • 12 cups veggie broth
  • 1 teaspoon salt
  • 2 cups frozen peas
  • 6 Yukon gold potatoes
  • 1/2 cup full-fat Greek yogurt
  • 1/4 cup butter or olive oil
  • Salt to taste

Instructions

  1. Boil peeled and chopped Yukon gold potatoes until fork-tender. Drain and mash with Greek yogurt and butter.
  2. Sauté minced shallots in olive oil until fragrant. Add sliced mushrooms and chopped carrots; cook until softened.
  3. Stir in tomato paste and flour, then add red wine and vegetable broth gradually until thickened. Season to taste.
  4. Mix in frozen peas, then transfer the filling to an oven-safe dish. Spread mashed potatoes on top.
  5. Bake at 350°F for 15 minutes or until heated through; broil for an additional crispy top if desired.
