  • Zest of 1 lemon
  • 120 ml (1/2 cup) vegetable oil
  • 60 g (1/4 cup) unsalted butter, melted
  • 2 large eggs
  • 120 ml (1/2 cup) milk
  • 1 tsp vanilla extract
  • 250 g (1 1/2 cups) blueberries

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Grease a muffin tin or line with paper liners.
  3. In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and lemon zest.
  4. In another bowl, mix the vegetable oil, melted butter, eggs, milk, and vanilla extract until smooth.
  5. Combine wet ingredients into dry ingredients; fold gently until just mixed (lumps are okay).
  6. Carefully fold in blueberries.
  7. Fill muffin cups two-thirds full with batter.
  8. Bake for about 25 minutes until golden brown; test doneness with a toothpick.
