  • 1 cup plus 2 tablespoons sugar
  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 4 tablespoons butter (melted and cooled)
  • ¼ cup vegetable oil
  • ¾ cup plain Greek yogurt
  • ¼ cup milk
  • 1 ½ teaspoons vanilla extract

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare your muffin pan.
  2. Make the streusel topping by mixing sugar, brown sugar, flour, a pinch of salt, and melted butter in a bowl until crumbly.
  3. In a saucepan over medium heat, combine sliced strawberries with sugar; cook until thickened. Set aside to cool.
  4. In a large bowl, mix flour, baking powder, and salt together.
  5. In another bowl, whisk eggs and sugar until thick; then add melted butter, oil, yogurt, milk, and vanilla.
  6. Combine wet ingredients with dry ingredients gently; fold in remaining strawberries.
  7. Fill muffin cups with batter and top with strawberry filling followed by streusel topping.
  8. Bake for about 17 minutes or until a toothpick comes out clean.
