  • 10 oz fresh strawberries
  • 6 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 1/4 cup cake flour
  • 3/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 5 tbsp unsalted butter
  • 2 egg whites
  • 1 1/2 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup unsalted butter, softened
  • 4 oz. cream cheese, cold
  • 2 1/2 cups powdered sugar
  • 3/4 cup freeze dried strawberries

Instructions

  1. Prepare strawberries by mixing quartered strawberries with granulated sugar and lemon juice. Let sit for 10 minutes.
  2. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  3. Mix cake flour, baking powder, baking soda, and salt in a bowl.
  4. In another bowl, cream softened butter with granulated sugar until light and fluffy (about 3–5 minutes).
  5. Add egg whites one at a time, then stir in vanilla.
  6. Gradually mix in dry ingredients and buttermilk until just combined.
  7. Fold in the prepared strawberries gently.
  8. Fill cupcake liners two-thirds full with batter and bake for about 17 minutes or until a toothpick comes out clean.
  9. Cool cupcakes before frosting.
  10. Beat together softened butter and cream cheese until smooth for frosting.
  11. Gradually add powdered sugar and mix until well combined, then fold in freeze-dried strawberries.
  12. Once cooled, generously frost each cupcake with strawberry cream cheese frosting.
