  • 1 ½ lb chicken breast (34 pieces)
  • 1 cup ricotta cheese
  • 1 cup fresh chopped spinach
  • ½ cup shredded parmesan cheese
  • 1 ½ cups marinara sauce
  • 3 garlic cloves, minced (separated)
  • ½ tsp cracked pepper
  • ½ tsp sea salt
  • 1 tsp Italian seasoning
  • ¼ tsp crushed red pepper
  • extra parmesan for topping (about 1/4 – 1/3 cup)

Instructions

  1. Preheat your oven to 425°F.
  2. In a mixing bowl, combine ricotta cheese, parmesan, spinach, one minced garlic clove, Italian seasoning, and crushed red pepper. Mix well.
  3. In a greased baking dish, lay pounded chicken breasts evenly. Season with salt, pepper, and two minced garlic cloves. Spread the ricotta mixture over each breast and pour marinara sauce on top.
  4. Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F. For the last few minutes, sprinkle extra parmesan on top.
  5. Let it rest for 5 minutes before serving.
