  • 2 chicken breasts
  • 1 head green leaf lettuce (chopped)
  • 2 avocados (sliced)
  • 1 can black beans (drained and rinsed)
  • 2 tomatoes (diced)
  • 1 red bell pepper (sliced)
  • 1 cup corn
  • ½ cup ranch dressing
  • 23 tbsp hot sauce (like Chipotle Cholula)
  • Lime wedges and cilantro for garnish

Instructions

  1. Marinate the chicken: Combine lime juice, garlic powder, cumin, chili powder, salt, honey, and avocado oil in a bowl. Add chicken breasts and coat well. Refrigerate for at least 8 hours.
  2. Cook the chicken: Heat a grill pan over medium heat and spray with cooking spray. Grill chicken for about 5–6 minutes per side until cooked through. Allow to cool before slicing.
  3. Prepare the dressing: Mix ranch dressing with hot sauce in a small bowl.
  4. Assemble the salad: In a large bowl, layer lettuce, sliced chicken, tomatoes, black beans, bell pepper, avocado slices, corn, red onion, tortilla strips, cilantro, and lime juice. Drizzle with spicy ranch dressing.
