  • 2 tbsp olive oil
  • 2 chorizo or andouille sausage links (casing removed)
  • 3/4 cup yellow onion (diced)
  • 1/2 cup carrot (sliced)
  • 1/4 cup celery (sliced)
  • 2 tsp smoked paprika
  • 2 garlic cloves (minced)
  • 1 lb. yukon gold or red potatoes (diced)
  • 2 cups kale (stems removed)
  • 32 oz. chicken broth
  • 1 cup water
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add the sausage and cook until browned (approximately 5 minutes). Remove the sausage using a slotted spoon.
  2. In the same skillet, sauté diced onion, sliced carrots, celery, minced garlic, and smoked paprika for 2–3 minutes.
  3. Add diced potatoes and chopped kale; stir to combine.
  4. Pour in chicken broth and water; bring to a boil. Reduce heat to simmer, cover with a lid, and cook until potatoes are tender (about 15 minutes).
  5. Return cooked sausage to the pot. Season with salt and pepper to taste, garnish with fresh parsley before serving.
