- 2 cups fresh pineapple (diced)
- 3 jalapeños (seeded and chopped)
- 1 small red onion (finely chopped)
- 2 tablespoons ginger (grated)
- 1/2 cup brown sugar
- 1/2 cup apple cider vinegar
- 1 teaspoon ground cumin
- 1 tablespoon lime juice
- Olive oil
- Prepare ingredients: Dice pineapple, chop jalapeños, finely chop onion and ginger.
- Heat olive oil in a medium saucepan over medium heat.
- Sauté onion and ginger until translucent (about 3–5 minutes).
- Add all remaining ingredients: pineapple, jalapeños, brown sugar, vinegar, cumin, salt, pepper.
- Simmer mixture on low heat for about 20 minutes until slightly thickened.
- Stir in lime juice after removing from heat.
- Cool and transfer to an airtight container; refrigerate for at least one hour.
