  • 2 cups fresh pineapple (diced)
  • 3 jalapeños (seeded and chopped)
  • 1 small red onion (finely chopped)
  • 2 tablespoons ginger (grated)
  • 1/2 cup brown sugar
  • 1/2 cup apple cider vinegar
  • 1 teaspoon ground cumin
  • 1 tablespoon lime juice
  • Olive oil

Instructions

  1. Prepare ingredients: Dice pineapple, chop jalapeños, finely chop onion and ginger.
  2. Heat olive oil in a medium saucepan over medium heat.
  3. Sauté onion and ginger until translucent (about 3–5 minutes).
  4. Add all remaining ingredients: pineapple, jalapeños, brown sugar, vinegar, cumin, salt, pepper.
  5. Simmer mixture on low heat for about 20 minutes until slightly thickened.
  6. Stir in lime juice after removing from heat.
  7. Cool and transfer to an airtight container; refrigerate for at least one hour.
