  • 1 can black-eyed peas
  • 1 cup corn
  • 1 cup red cabbage (finely chopped)
  • 1 orange pepper (diced)
  • 1/2 red onion (finely diced)
  • 1 cup cherry tomatoes (halved)
  • 1 jalapeño (deseeded and minced)
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 2 tsp southwest spice blend (or 1 tsp cumin)
  • 1 tbsp honey
  • 2 cloves garlic (minced)
  • 1/2 tsp each salt & pepper

Instructions

  1. In a small bowl, whisk together the olive oil, lime juice, red wine vinegar, Dijon mustard, honey, minced garlic, southwest spice blend (or cumin), salt, and pepper. Set aside.
  2. In a large mixing bowl, combine the black beans, black-eyed peas, corn, red cabbage, orange pepper, red onion, cherry tomatoes, and jalapeño.
  3. Pour the dressing over the bean mixture and toss gently until evenly coated.
  4. Serve immediately or let sit for up to 30 minutes to allow flavors to meld.
