  • 1/2 pound boneless skinless chicken breasts
  • 1 tablespoon southwest seasoning
  • 5 cups mixed greens
  • 1/2 cup diced tomatoes
  • 1/2 cup green onions, diced
  • 1/2 large avocado, diced
  • 1 cob sweet corn
  • 1/2 cup shredded Manchego or pepper jack cheese
  • 1/2 cup tortilla strips
  • 1/2 cup chipotle lime southwest dressing

Instructions

  1. Rub chicken breasts with southwest seasoning and cook in a non-stick skillet over high heat for 6-8 minutes until they reach an internal temperature of 165°F. Set aside to rest.
  2. In the same skillet, grill the husked sweet corn for 6-8 minutes until cooked through. Cut kernels off the cob.
  3. Once rested, slice the chicken into bite-sized pieces.
  4. In bowls, divide mixed greens tossed with chipotle lime dressing and layer on tomatoes, cheese, green onions, avocados, sweet corn, chicken, and tortilla strips.
