  • 1 (14 ounce) bag Success Whole Grain Brown Rice
  • 2 tablespoons olive oil
  • 3 medium chicken breasts (cut into chunks)
  • 1 envelope taco seasoning (divided)
  • ½ green bell pepper (diced)
  • ½ red bell pepper (diced)
  • ½ yellow bell pepper (diced)
  • 1 cup corn (fresh or frozen)
  • 1 can black beans (drained and rinsed)
  • 1 can diced tomatoes with green chilies
  • ¼ cup fresh cilantro (chopped)

Instructions

  1. Cook the brown rice according to package instructions; set aside.
  2. In a large skillet over medium heat, heat olive oil. Add chicken chunks and sprinkle with taco seasoning. Cook for about 3-4 minutes per side until cooked through; remove from skillet.
  3. In the same skillet, sauté diced bell peppers for 4-5 minutes until tender.
  4. Stir in corn, black beans, diced tomatoes, and cilantro; mix well.
  5. Return chicken and rice to the skillet, add remaining taco seasoning, stir thoroughly, and simmer for another 3-4 minutes.
  6. Serve in bowls topped with additional cilantro if desired.
