Slow Cooker Pineapple Beef Loin is a deliciously easy dish that brings together the sweet and savory flavors of tender Beef and tropical pineapple. Using just six simple ingredients, this recipe is perfect for busy weeknights or festive gatherings.

  • 23 lb Beef loin (trimmed)
  • 2 tablespoons vegetable oil
  • 8 cloves garlic (minced)
  • 1/4 cup soy sauce
  • 1/2 cup brown sugar
  • 1 can (23.5 oz) pineapple chunks with juice

Instructions

  1. Trim excess fat from the Beef loin and season with salt and pepper.
  2. Heat vegetable oil in a large pan over medium-high heat, then brown the Beef on all sides for about 2-4 minutes.
  3. Place the browned Beef loin in a slow cooker. Rub minced garlic on top, then pour in soy sauce and add pineapple chunks with juice. Sprinkle brown sugar evenly.
  4. Cover and cook on low for 6 hours for sliceable meat or up to 10 hours for shredded Beef. Baste occasionally with juices if desired.
  5. If shredding, remove the Beef after cooking, shred with forks, return to the cooker, and heat for an additional hour before serving.
