  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 4 cups low-sodium chicken broth
  • 1 large yellow onion, chopped
  • 46 cloves garlic, minced
  • 1.5 cups uncooked orzo pasta
  • 4 oz cream cheese, softened
  • 3/4 cup freshly grated Parmesan cheese
  • Fresh parsley
  • olive oil
  • Italian seasoning

Instructions

  1. Sear the chicken in a skillet until browned; set aside.
  2. Sauté onion and garlic until fragrant.
  3. Deglaze with white wine (optional) and add chicken broth.
  4. Layer seared chicken on top of onions; sprinkle half of parsley.
  5. Cook on LOW for 5-7 hours or HIGH for 3-4 hours.
  6. Shred chicken in the slow cooker, then stir in uncooked orzo.
  7. Mix in cream cheese and Parmesan until creamy.
