  • 2 kg lamb shoulder or leg
  • 600 g potatoes
  • 1 onion
  • 3 cloves garlic
  • 2 sprigs rosemary
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • 150 ml stock
  • 1 bay leaf

Instructions

  1. Place quartered onion layers and sliced potatoes at the bottom of the slow cooker.
  2. Make incisions in the lamb and stuff with sliced garlic and rosemary.
  3. Mix olive oil, crushed garlic, oregano, lemon juice, salt, and pepper; rub over the lamb.
  4. Sear the lamb in a non-stick pan until golden brown.
  5. Place the seared lamb on top of vegetables in the slow cooker.
  6. Pour stock into the pan, scrape any bits, then add to the slow cooker along with a bay leaf.
  7. Cover and cook on low for about 8 hours until tender.
