  • 4 garlic cloves, minced
  • 3 cups beef broth
  • 1 ¼ cups Guinness beer, divided
  • 1 pound carrots, cut into 1-inch pieces
  • 1 ½ pounds Yukon gold potatoes, cut into 1-inch pieces
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. Season beef cubes with salt and pepper and toss with flour.
  2. Heat oil in a Dutch oven over medium-high heat, browning the beef on all sides. Transfer to the slow cooker.
