Instructions

  1. Preheat your oven to 350ºF and grease a 9×13 inch baking pan.
  2. In a large bowl, mix the grated zucchini, brown sugar, applesauce, eggs, and vanilla until well combined.
  3. In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry mixture to the wet ingredients and stir until just combined. Fold in chocolate chips or nuts if desired.
  5. Pour the batter into the prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. Allow to cool before serving.
