  • 1 to 2 cups crumbled plant-based sausage
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, finely chopped
  • 2 tablespoons sun-dried tomatoes in oil, chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried thyme
  • 6 to 7 cups vegetable broth
  • 2 1/2 cups butternut squash, cut into bite-sized pieces
  • Salt and pepper, to preference
  • 1 pound potato gnocchi
  • 1 1/2 cups half-and-half
  • 4 cups kale, chopped
  • Freshly grated parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes). Add minced garlic and sun-dried tomatoes; cook for an additional minute.
  2. Sprinkle in garlic powder, rosemary, and thyme; stir to combine.
  3. Pour in vegetable broth and add butternut squash. Bring to a boil, then reduce to a simmer for about 15 minutes until squash is tender.
  4. Stir in potato gnocchi and cook according to package instructions (about 3–5 minutes) until they float.
  5. Add half-and-half while stirring; incorporate chopped kale and let it wilt for another couple of minutes.
  6. Season with salt and pepper as desired, then serve hot topped with freshly grated parmesan cheese.
