  • 1 (16-ounce) loaf brioche, cut into 1-inch pieces
  • 6 large eggs
  • 2 cups half-and-half
  • 1 (14-ounce) can pumpkin purée
  • 3 tablespoons granulated sugar
  • 1 tablespoon pumpkin pie spice
  • For Streusel: 1/4 cup all-purpose flour
  • 3 tablespoons light brown sugar
  • 3 tablespoons chopped pecans
  • 2 tablespoons unsalted butter

Instructions

  1. Grease your slow cooker with cooking spray or unsalted butter.
  2. In a mixing bowl, whisk together eggs, half-and-half, pumpkin purée, sugar, pumpkin pie spice, vanilla extract, and salt until well combined.
  3. Layer half of the brioche pieces in the slow cooker and pour half of the egg mixture over them. Repeat with remaining brioche and egg mixture.
  4. For streusel topping: Combine flour, brown sugar, pecans, cinnamon, nutmeg, salt, and melted butter until crumbly; sprinkle over casserole.
  5. Cover and cook on low for about 4 hours or until set. Serve warm with optional powdered sugar or maple syrup.
