  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup plain yogurt
  • 2 tablespoons rosewater
  • ¼ cup whole milk
  • 1 tablespoon lemon zest (optional)
  • 1 cup powdered sugar
  • 2 tablespoons rosewater (for glaze)
  • 12 teaspoons water (adjust for consistency)
  • Crushed pistachios
  • Edible rose petals (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cardamom, and salt.
  3. Use a food processor to finely grind pistachios.
  4. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
