  • 1 pound raw jumbo shrimp (deveined)
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper (cut into 1-inch pieces)
  • 3 cloves garlic (minced)
  • 3/4 cup pineapple juice
  • 1/4 cup low sodium soy sauce
  • 1/3 cup hoisin sauce
  • Salt and pepper to taste
  • 2 teaspoons vegetable oil (or canola oil)
  • 1 teaspoon minced ginger
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • 1/4 cup brown sugar (packed – honey or maple syrup)
  • 1 teaspoon sesame seeds
  • 1 tablespoon sliced green onions

Instructions

  1. In a small bowl, mix together the pineapple juice, soy sauce, hoisin sauce, cornstarch, and water; set aside.
  2. Heat vegetable oil in a large pan over medium-high heat. Season shrimp with salt and pepper, then cook until pink (about 6-8 minutes). Remove and set aside.
  3. In the same pan, sauté red bell pepper and pineapple for about 4-5 minutes. Add garlic and ginger; cook for an additional 30 seconds.
  4. Stir in the prepared sauce and bring to a simmer.
  5. Mix cornstarch with cold water until smooth, pour into the pan while stirring continuously until thickened.
  6. Return shrimp to the pan, coating them in the sauce before serving over rice.
