  • 2 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 packages cream cheese (8 oz each)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup light brown sugar
  • 1/2 cup light corn syrup
  • 1/2 cup heavy whipping cream
  • 1/4 cup unsalted butter
  • 2 cups chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C) and line a 13×9-inch baking dish with parchment paper.
  2. In a food processor, pulse graham crackers with sugar until fine crumbs form. Add melted butter and mix until combined. Press firmly into the bottom of the prepared baking dish.
  3. In mixing bowls, beat softened cream cheese with sugar, eggs, and vanilla until fluffy. Pour over the crust.
  4. In a saucepan over medium heat, combine brown sugar, corn syrup, cream, butter, and salt; boil for one minute. Remove from heat and stir in vanilla and pecans. Cool slightly before pouring over cheesecake layer.
  5. Bake for 35 minutes or until edges are set but center has a slight jiggle. Cool completely at room temperature before refrigerating for at least four hours or overnight.
