  • 6 teaspoons light brown sugar
  • 1 ½ cups all-purpose flour
  • 2/3 cup granulated sugar
  • 1 large egg
  • ½ cup buttermilk

Instructions

  1. Preheat oven to 350°F (177°C) and spray a non-stick muffin pan with cooking spray.
  2. Slice the peaches into thin wedges and set aside.
  3. In a small bowl, mix cold butter and brown sugar, then distribute evenly into the muffin cups.
  4. Arrange peach slices on top of the butter-sugar mixture in each cup.
  5. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Cream granulated sugar with room-temperature butter until fluffy. Add egg and vanilla; mix well.
  7. Alternate adding dry ingredients with buttermilk until just combined.
  8. Spoon batter over peaches in muffin cups, filling about three-quarters full.
  9. Bake for 25-30 minutes or until a toothpick comes out clean. Allow cooling before serving.
