  • 1 cup granulated sugar (plus extra for filling)
  • 1 cup cold unsalted butter
  • 2 teaspoons ground cinnamon
  • 6 cups fresh peaches (sliced)
  • 1 large egg
  • 1½ tablespoons cornstarch
  • Fresh lemon juice

Instructions

  1. Preheat your oven to 350°F and line a 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, combine flour, sugar, baking powder, cinnamon, and salt. Cut in cold butter until crumbly. Mix in the egg and vanilla extract.
  3. Press half of the mixture into the bottom of the pan and set aside the rest.
  4. In another bowl, mix sliced peaches with sugar, cornstarch, lemon juice, and cinnamon.
  5. Spread peach filling over the crust and top with remaining crumb mixture.
  6. Bake for about 45 minutes until golden brown. Let cool before slicing.
