  • 1 lb ground pork (or ground chicken)
  • 1 small yellow onion
  • 3 cloves garlic
  • 1 thumb-sized piece of ginger
  • 1 cup shredded carrots
  • 1 green cabbage
  • 6 cups chicken broth
  • Coconut aminos
  • Rice vinegar

Instructions

  1. In a large pot, brown the ground pork over medium heat with salt and pepper; set aside.
  2. In the same pot, melt coconut oil and sauté diced onion, minced garlic, and grated ginger for 4 minutes. Add shredded carrots and sliced cabbage, cooking until slightly softened.
  3. Pour in chicken broth, add cooked pork and coconut aminos. Bring to a boil, then reduce to simmer for 20-25 minutes until cabbage is tender. Stir in rice vinegar at the end.
  4. Serve hot, garnished with chopped green onions.
