  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter (softened)
  • 1â…“ cups brown sugar (lightly packed)
  • ½ cup granulated sugar
  • 2 large eggs
  • 1½ tablespoons unsulphured molasses
  • 1½ teaspoons pure vanilla extract
  • 12 tablespoons unsalted butter (softened)
  • 1½ cups marshmallow creme
  • 2 cups powdered sugar
  • ¾ teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In one bowl, mix oats, flour, cinnamon, baking soda, and salt.
  3. In another bowl, cream butter with both sugars until fluffy. Add eggs, molasses, and vanilla; mix well.
  4. Gradually combine dry ingredients with the wet mixture until just blended.
  5. Drop spoonfuls of dough onto prepared sheets and bake for about 10 minutes until golden around the edges.
  6. For filling, beat softened butter with marshmallow creme; gradually add powdered sugar and vanilla until fluffy.
  7. Assemble by spreading filling on one cookie half and topping it with another.
