  • 2.5 lbs bone-in chicken (thighs or drumsticks)
  • 1 onion (chopped)
  • 4 large Roma tomatoes
  • 1 large red bell pepper
  • 2 scotch bonnet peppers
  • 1/4 cup vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 bouillon cube
  • Salt to taste

Instructions

  1. Season the chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onions. Marinate for at least 30 minutes.
  2. In a large skillet over medium-high heat, heat vegetable oil and sear the chicken until browned on both sides. Remove and set aside.
  3. Blend Roma tomatoes, red bell pepper, small red onion, and scotch bonnet peppers into a smooth mixture.
  4. In the same skillet used for chicken, fry tomato paste for about 2 minutes. Add the blended mixture and cook for 10 minutes on medium heat.
  5. Stir in garlic powder, ginger powder, bouillon cube, and additional salt as needed.
  6. Return seared chicken to the skillet and simmer on low heat for 25–30 minutes until chicken is tender and stew thickens.
  7. Serve hot with rice or other preferred sides.
