  • 1 cup tomato juice (or Clamato)
  • ½ cup ketchup
  • 3 tablespoons lime juice
  • ½ cup diced cucumber
  • ½ cup diced white onion
  • ½ cup diced bell peppers
  • 1 jalapeño (minced)
  • Fresh cilantro leaves (chopped)
  • Optional: diced avocado for garnish

Instructions

  1. Toss chopped shrimp with 1 tablespoon lime juice and a pinch of salt. Set aside.
  2. In a large bowl, whisk together tomato juice, ketchup, remaining lime juice, hot sauce, salt, and black pepper until smooth.
  3. Fold in diced cucumber, onion, bell pepper, jalapeño, celery (if using), and cilantro until well combined.
  4. Gently fold in the shrimp mixture; if too thick, loosen with additional tomato juice.
  5. Cover and chill for 15–30 minutes to meld flavors.
