  • 1 can (15 oz) garbanzo beans, rinsed and drained
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1/4 cup red onion, chopped fine
  • 3/4 cup celery, chopped
  • 1 cucumber, peeled, seeded, and chopped
  • 3/4 cup fresh Italian parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tomatoes, chopped fine
  • 1/4 cup extra-virgin olive oil
  • juice of 1.5 lemons
  • 1 clove garlic (minced)
  • Italian seasoning, salt & pepper

Instructions

  1. In a large mixing bowl, combine all the beans and veggies: red onion, celery, cucumber, parsley, basil, and tomatoes.
  2. In another bowl or mason jar, whisk together the dressing ingredients: olive oil, lemon juice, minced garlic, Italian seasoning, salt & pepper until well blended.
  3. Drizzle the dressing over the salad mixture and toss gently until everything is evenly coated.
  4. Refrigerate for at least 45 minutes to allow flavors to meld before serving.
