  • 1 large yellow onion (chopped)
  • 1 red bell pepper (chopped)
  • 2 tablespoons minced fresh ginger
  • 2 tablespoons garlic
  • 3 tablespoons red curry paste
  • 2 cups ripe mango (diced)
  • 1 can (13.5 ounces) coconut milk
  • 1 pound boneless, skinless chicken thighs (cut into cubes)

Instructions

  1. In a large pot, heat coconut oil over medium heat; sauté onion and red bell pepper until soft (7–9 minutes). Add garlic and ginger; cook for another minute.
  2. Stir in red curry paste and spices; cook until fragrant (1–3 minutes).
  3. Mix in 1 cup diced mango and coconut milk; bring to a boil then simmer for 10–15 minutes.
  4. Blend the sauce until smooth; return to pot and add chicken pieces. Cook covered for 8–15 minutes until chicken is cooked through.
  5. Stir in remaining mango before serving over rice or with naan.
