  • 30 grams butter, melted
  • 1 egg, at room temperature
  • 375 grams all-purpose flour (3 cups)
  • 5 grams instant yeast (1 + 1/2 teaspoons)
  • 40 grams granulated sugar (2 tablespoons)
  • 3 grams salt (1/2 teaspoon)
  • vegetable oil
  • 60 grams butter (1/4 cup), softened to room temperature
  • 100 grams granulated sugar (1/2 cup)
  • 3 tablespoons lemon zest (from approximately 3 lemons), divided
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened at room temperature
  • 1/2 cup confectioners’ sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest (optional, to sprinkle on top)

Instructions

  1. Prepare the Dough: Mix warm milk, melted butter, and egg in a bowl. In another bowl, combine flour, instant yeast, sugar, and salt. Gradually add the dry ingredients to the wet mixture until a dough forms.
  2. Knead: Turn the dough onto a floured surface and knead for 8–10 minutes until smooth. Place in an oiled bowl, cover, and let rise for 1 hour.
  3. Make Filling: Combine softened butter, sugar, lemon zest, and vanilla extract in a bowl until smooth.
  4. Roll Out Dough: After rising, roll the dough into a rectangle and spread the filling evenly.
  5. Form Rolls: Roll tightly into a log and cut into 12 pieces.
  6. Second Rise: Let the rolls rise again on a lined baking sheet for 30–45 minutes.
  7. Bake: Preheat oven to 350°F (175°C) and bake for approximately 25 minutes until golden brown.
  8. Make Icing: Mix cream cheese with confectioners’ sugar and lemon juice until smooth.
  9. Ice Rolls: Drizzle icing over the warm rolls before serving.
