  • 4 1/2 tsp instant dry yeast (14g)
  • 1 Tbsp + 1 tsp poppy seeds – optional
  • 1 tsp fine salt (6g)
  • 1 cup buttermilk, room temperature (240g)
  • 1/2 cup granulated sugar (100g)
  • 1/2 cup unsalted butter, room temperature (113g)
  • 2 large eggs, room temperature (112g)
  • 2 Tbsp fresh lemon zest (6g)
  • 1/2 cup granulated sugar (100g)
  • 1/2 cup packed light brown sugar (100g)
  • 2 Tbsp fresh lemon zest (6g)
  • 1/2 cup unsalted butter, softened (113g)
  • 2 cups powdered sugar (250g)
  • 1/4 cup fresh lemon juice (60g)
  • 2 Tbsp unsalted butter, melted (28g)
  • Fresh lemon zest for garnish

Instructions

  1. Combine warm buttermilk and yeast in a stand mixer bowl; let sit for 5 minutes until bubbly.
  2. Add sugar, butter, eggs, salt, and lemon zest; mix in flour gradually to form a soft dough.
  3. Knead the dough for 5-7 minutes until smooth; rise in a warm place for 60 minutes.
  4. Roll out the dough into a rectangle; spread softened butter and sprinkle sugars with lemon zest.
  5. Roll tightly into a log; slice into 1-1.5 inch pieces using dental floss.
  6. Place in a greased pan to rise for another 30 minutes; bake at 350°F (175°C) for 25-28 minutes.
  7. Mix powdered sugar with melted butter and lemon juice; drizzle over cooled rolls before serving.
