Lemon ricotta pasta & spinach is a bright and flavorful dish that elevates your everyday meals with minimal effort. This easy recipe combines creamy ricotta cheese, vibrant fresh spinach, and zesty lemon juice for a delightful pasta experience ready in just 15 minutes.

  • 1/2 lb (8oz) pasta (spaghetti, linguine, penne, fusilli)
  • 1 cup (9oz) whole-milk ricotta
  • 8 oz fresh baby spinach
  • 1/3 cup grated Parmesan cheese
  • 1 unwaxed lemon (zest and juice)
  • 1 Tbsp extra virgin olive oil
  • 1 garlic clove (grated)
  • Salt and black pepper

Instructions

  1. Cook pasta according to package instructions in salted boiling water until al dente.
  2. In a medium bowl, mix ricotta, olive oil, Parmesan, garlic, lemon zest, lemon juice, salt, and pepper until combined.
  3. In the last minute of cooking, add spinach to the pot with the pasta.
  4. Reserve 1/2 cup of cooking water; then drain the pasta and spinach.
  5. Return them to the pot and mix with the ricotta sauce and reserved water until creamy.
  6. Serve immediately topped with extra Parmesan and olive oil.
