  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1 teaspoon oregano
  • ¼ cup chicken broth or low-sodium broth
  • Salt and pepper to taste

Instructions

  1. Cook orzo in salted boiling water for 8-10 minutes; drain and set aside.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and oregano. Cook until fully cooked (5-7 minutes), then remove from skillet.
  3. In the same skillet, add remaining olive oil and sauté garlic and mixed vegetables for 3-4 minutes.
  4. Return chicken to skillet, add orzo, lemon juice, zest, and broth; stir well and cook for an additional 2-3 minutes until heated through.
