  • 3 tbsp olive oil
  • 4 cloves garlic (minced)
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp lemon juice
  • ½ cup basmati or jasmine rice
  • 2 ¼ cups water
  • Pinch of salt
  • ½ cup mayonnaise
  • ½ cup plain yoghurt (Greek yoghurt works well)
  • 3 cloves garlic (minced)
  • 1 tbsp lemon juice
  • 1 tbsp vinegar (white or apple cider)
  • 1 tsp sugar
  • Salt and pepper (to taste)
  • Fresh parsley, mint, or cilantro (chopped)
  • Pickled onions
  • Lemon wedges
  • Hot sauce

Instructions

  1. In a bowl, mix minced garlic, spices, salt, black pepper, lemon juice, and olive oil to create a marinade.
  2. Coat the lamb pieces in the marinade; let sit for at least 15 minutes.
  3. In a skillet over medium-high heat, cook marinated lamb until browned on all sides (8-10 minutes). Set aside.
  4. In the same skillet, boil water with a pinch of salt; add rice and simmer covered for about 15 minutes until cooked.
  5. For the sauce, whisk together mayonnaise, yogurt, minced garlic, lemon juice, vinegar, sugar, salt, and pepper until smooth.
  6. Serve warm rice topped with lamb and drizzle with garlic sauce; garnish with fresh herbs.
