  • 2 lbs lamb (shoulder or leg, cut into bite-sized pieces)
  • 2 medium onions (finely chopped)
  • 4 cloves garlic (minced)
  • 1-inch piece ginger (grated)
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk (optional)
  • 1 tsp turmeric powder
  • 2 tsp cumin seeds
  • 1 tbsp ground coriander
  • 12 tsp chili powder (adjust to taste)
  • 1 tsp garam masala

Instructions

  1. Prepare your ingredients: chop onions, mince garlic, and grate ginger.
  2. Heat oil in a large pot over medium heat. Toast cumin seeds until fragrant, then add turmeric, coriander, chili powder, and garam masala.
  3. Sauté onions until golden brown (about 10 minutes). Add garlic and ginger; cook for another 2-3 minutes.
  4. Brown the lamb pieces on all sides for about 5-7 minutes. Stir in diced tomatoes.
  5. Cover and simmer on low heat for 1 hour, stirring occasionally. Adjust consistency with water if needed.
  6. For creaminess, stir in coconut milk during the last 10 minutes of cooking.
  7. Garnish with fresh cilantro and serve hot with lime wedges alongside rice or naan.
