  • 1 lb smoked turkey necks
  • 2 cups dried kidney beans (soaked overnight)
  • 1 yellow onion, chopped
  • 3 cloves garlic, chopped
  • 13.5 oz can unsweetened coconut milk
  • 1 scotch bonnet pepper
  • Fresh thyme (dried option available)
  • Salt and black pepper to taste

Instructions

  1. In a pressure cooker, combine soaked kidney beans, water from soaking, coconut milk, turkey necks, onions, garlic, and thyme.
  2. Seal the pressure cooker and cook on high for 35 minutes. Allow natural release for 10 minutes.
  3. While the stew cooks, mix flour and salt in a bowl. Gradually add water to form a smooth dough; shape into small dumplings (spinners).
  4. After releasing pressure, switch to sauté mode. Add spinners and whole scotch bonnet to the stew; simmer for 5-7 minutes until dumplings are cooked through.
  5. Remove scotch bonnet pepper; season with salt and pepper before serving hot.
