Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion, carrots, and celery for 5–7 minutes until softened. Add minced garlic and cook for another minute.
  2. Pour in chicken broth and add the chicken breast along with bay leaves, oregano, thyme, and red pepper flakes if desired. Bring to a gentle boil before reducing heat to simmer.
  3. Simmer for 25–30 minutes until chicken is cooked through. Remove chicken and shred once cool enough to handle.
  4. Return shredded chicken to the pot, bring back to a gentle boil, then add pasta and cook according to package instructions until al dente.
