  • 1/2 C. sugar
  • 2 tbsp. cornstarch
  • 1/2 tsp. grated orange zest
  • 1/4 C. freshly squeezed orange juice
  • 12 tbsp. very cold butter (for crust)
  • 3 C. all-purpose flour (for crust)
  • 1 egg (for egg wash)

Instructions

  1. Prepare the pie crust by pulsing flour, sugar, salt, cold butter, and shortening in a food processor until it resembles peas. Gradually add ice water until dough forms.
  2. Roll out half of the dough into a circle larger than your pie dish and transfer it carefully into the dish.
  3. Slice peaches and mix with sugar, cornstarch, orange zest, orange juice, and butter in a saucepan until thickened.
  4. Pour peach mixture into the prepared crust; cover with lattice strips from the remaining dough.
  5. Brush with egg wash and sprinkle sugar on top before baking at 400°F for about 45 minutes until golden.
