  • 1/3 cup honey
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • Vegetables (bell peppers, peas)
  • Soy sauce and garlic

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a bowl, mix ground meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil (optional), pepper, and salt. Form into small meatballs.
  3. Brown the meatballs in a skillet over medium heat for 2-3 minutes on each side.
  4. In another saucepan, combine honey, soy sauce, ketchup, water, and garlic to create the sauce; simmer until slightly thickened.
  5. Spread uncooked rice in the baking dish; layer with vegetables and drizzle with olive oil. Pour chicken broth over everything, nestle browned meatballs on top, and drizzle with sauce.
  6. Cover with foil and bake for 40 minutes; uncover and bake for an additional 10-15 minutes until rice is cooked.
