  • 1/4 cup oyster sauce
  • 2 tablespoons ketchup
  • 2 tablespoons honey
  • 2 tablespoons chili garlic sauce
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic (minced)
  • 2 teaspoons freshly grated ginger
  • 2 pounds boneless, skinless chicken thighs (cut into 1-inch chunks)
  • Canola oil for brushing
  • Kosher salt and freshly ground black pepper (to taste)
  • Green onions and toasted sesame seeds for garnish

Instructions

  1. In a medium bowl, mix the oyster sauce, ketchup, honey, chili garlic sauce, Dijon mustard, minced garlic, grated ginger, and water. Reserve 1/3 cup of this marinade.
  2. Place the chicken in a gallon-sized Ziploc bag or large bowl and pour in the remaining marinade. Seal tightly and marinate for at least 2 hours or overnight.
  3. Preheat the grill to medium heat. Thread marinated chicken onto skewers and brush with canola oil; season with salt and pepper.
  4. Grill skewers for about 10 minutes or until they reach an internal temperature of 165°F, turning occasionally. Brush with reserved marinade during the last few minutes of cooking.
  5. Serve immediately garnished with green onions and sesame seeds.
