  • 1 tsp baking powder
  • 1 tsp salt
  • 3 large eggs
  • 2/3 cup vegetable oil
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/4 cup honey
  • 1/2 cup honey (for glaze)
  • 1/4 cup brown sugar (for glaze)
  • 1/4 cup unsalted butter (for buttercream)
  • 1 cup unsalted butter (room temperature, for buttercream)
  • 1 large jar marshmallow cream (for buttercream)
  • 3 cups powdered sugar (can add an extra cup if needed to thicken, for buttercream)
  • 1 tbsp milk (optional, for buttercream)
  • 1 tsp vanilla extract (for buttercream)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In one bowl, combine flour, baking soda, baking powder, and salt. In another bowl, whisk eggs, then mix in vegetable oil, vanilla extract, milk, granulated sugar, brown sugar, and honey. Combine both mixtures until just blended.
  3. Pour batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out clean.
  4. While baking, make the honey glaze by simmering honey and brown sugar until combined.
  5. After removing the cake from the oven, poke holes in it and pour the warm glaze over the top.
  6. For the marshmallow buttercream, beat unsalted butter until creamy, mix in marshmallow cream and powdered sugar until desired consistency is reached.
  7. Frost cooled cake with marshmallow buttercream.
