  • 1/3 cup warm water
  • 2 1/4 teaspoons active dry yeast
  • 1/3 cup + 1/4 teaspoon granulated sugar
  • 1 1/3 cups warm milk
  • 5 tablespoons salted butter, softened
  • 1 large egg
  • 1 1/2 teaspoons salt
  • 44 1/2 cups all-purpose flour

Instructions

  1. Proof the yeast by combining warm water, yeast, and 1/4 tsp sugar in a bowl. Let it rest until foamy (5-10 minutes).
  2. In a stand mixer bowl (or large mixing bowl), mix the foamy yeast with warm milk, sugar, softened butter, egg, salt, and one cup flour until combined.
  3. Gradually add remaining flour while mixing on low speed until dough pulls away from sides. Knead until smooth and elastic (5-6 minutes).
  4. Transfer dough to a greased bowl; cover and let rise in a warm place until doubled (1 to 1.5 hours).
  5. Roll out risen dough into two rectangles and cut into strips; roll each rectangle tightly and place seam-side down on a greased baking sheet.
  6. Cover rolls and let rise again until doubled (about one hour). Preheat oven to 375°F.
  7. Bake rolls for about 12-15 minutes until golden brown; brush with melted butter once out of the oven.
