  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon Cajun seasoning (for chicken)
  • 1/2 teaspoon salt (for chicken)
  • 1/4 teaspoon black pepper (for chicken)
  • 2 tablespoons Cajun seasoning (for soup)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (or more)
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 2 tablespoons green onions, thinly sliced (for garnish, optional)

Instructions

  1. Cut chicken into bite-sized pieces and season with salt, pepper, and Cajun seasoning.
  2. Dice onion, celery, and bell pepper finely; mince garlic.
  3. Heat olive oil in a Dutch oven over medium-high heat and sear seasoned chicken until golden brown.
  4. In the same pot, prepare a roux by melting butter and whisking in flour until golden.
  5. Add diced vegetables to the roux and sauté until softened.
  6. Stir in garlic and spices; add broth gradually while scraping the bottom of the pot.
  7. Return seared chicken to the pot and simmer with the mixture for 20–25 minutes until flavors meld.
  8. Stir in heavy cream off the heat; adjust seasoning as needed.
