  • 11.5 lbs chicken breast or boneless skinless chicken thighs
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1/2 red onion
  • 1 cup pineapple chunks
  • 1/2 cup Primal Kitchen Foods Hawaiian BBQ Sauce
  • 1 tbsp avocado oil
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, season the chicken with avocado oil, salt, and pepper.
  3. Add diced bell peppers, onion chunks, and BBQ sauce to the bowl; mix until well coated.
  4. Spread the mixture onto the prepared baking sheet and bake for 20 minutes.
  5. Remove from oven, top with pineapple chunks, then return to bake for another 10-20 minutes until chicken reaches an internal temperature of 165°F (74°C).
  6. Squeeze lime juice over the dish before serving.
