  • 1 large yellow onion
  • 1 large green bell pepper
  • 10 cups beef broth
  • 1 ring andouille sausage
  • 3 pounds shrimp (peeled, deveined)
  • Canned tomatoes and seasonings

Instructions

  1. In a large pot, melt butter and whisk in flour to make a roux, cooking until deep brown (30-40 minutes).
  2. Add chopped celery, onion, bell pepper, and garlic to the roux; cook until tender (8-12 minutes).
  3. Gradually whisk in beef broth; bring to a boil (15-20 minutes).
  4. Stir in sausage, tomatoes, hot sauce, sugar, Cajun seasoning, thyme, and bay leaves; simmer uncovered for 45 minutes.
  5. Add gumbo file powder and shrimp; cook on low heat for another 45-60 minutes.
