  • 2 tablespoons butter
  • 2 tablespoons flour
  • ⅔ cup Guinness stout
  • 1 ½ cups 2% milk
  • ½ cup half and half
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon dijon mustard
  • 2 ounces cream cheese
  • 3 ½ cups shredded Irish cheddar (or another good melting cheese)
  • panko breadcrumbs
  • minced garlic
  • fresh parsley

Instructions

  1. Cook pasta al dente in salted boiling water, then drain.
  2. In a skillet, melt butter and whisk in flour. Gradually add Guinness, milk, half and half, salt, pepper, and mustard until thickened. Stir in cream cheese and cheddar until melted.
  3. Combine cooked pasta with cheese sauce.
  4. Prepare the breadcrumb topping by sautéing garlic in butter, then adding panko until golden.
  5. Transfer the mac and cheese to a baking dish, top with breadcrumbs, broil until golden brown.
  6. Serve hot garnished with parsley.
